"Baghrir" : the most tasty & fluffy pancakes you'll ever have!

Baghrir Moroccan pancakes
A fluffy warm Baghrira with melted honey & butter

These pancakes are very common in Morocco to have for breakfast or for a brunch along with Moroccan fresh mint tea. It's topped with melted butter and honey. It can't be topped with something else. It has to be served with butter & honey melted together.


Hot and ready to be served

The most important thing for this recipe is semolina, it has to be soft. It's the main ingredient to the success of Baghrir. The second note, is the amount of water that the semolina would need. Some requires a little bit more water that's why after you blend you should check if you mixture is similar to what's shown on the video below.


Kitchen appliances:

  • a blender

  • a whisk

  • a bowl

  • a flat cast iron skillet


Ingredients:

  • 1 cup of semolina

  • 3 tbsp of all purpose flour

  • 1 tbsp of sugar

  • 1 tsp of baking powder

  • 1 tsp of yeast

  • 1 tsp of vanilla extract

  • a pinch of salt

  • 1 3/4 cups to 2 cups of warm water.


To serve:

  • Honey

  • Salted butter , preferably the President.



Directions:


  1. Bring to the big bowl, the semolina, flour, yeast, salt, sugar, vanilla extract and add 1 & 3/4 cup of water. Whisk all the ingredients together then move it to a blender.

  2. Blend it for a minute and add the baking powder and blend it for another 30 seconds. If you notice that the mixture is tick and barely mixed add the remaining water. The mixture has to be fluffy and watery rather than a paste.

  3. Spray a vegetable oil on a hot heavy skillet and dry it with kitchen tissue.  Then turn your stove in medium heat as you don’t want to burn it. Start pouring 1/2 cup of the mixture. You'll notice the bubbles are coming up while cooking and you remove the pancake from skillet once completely cooked as shown in the tutorial.

  4. Mix butter with honey in microwave for 30 seconds. I prefer the salted President butter because it balances the taste of the sweetness. Pour the hot mixture on the pancakes and serve them warm with your favorite hot drink.


In Morocco, it's served with Moroccan fresh mint tea which makes the whole experience unforgettable.
